Three strips of bacon and one whole jalapeno, sliced length-wise were placed into the vodka chamber tonight. Sarah said, “the fat rising to the top of the bottle looks like a lava lamp”. Brunch at our place in three weeks!

I baked it on a sheet tray so it was nice and crispy. My wife looked at the bottle last night and said it looked like “Body Worlds in a bottle”. It smelled good though. I’ll be cracking that shit open next Sunday and will report back.

Yesterday I filtered the vodka through a coffee filter (8 to be exact) and the stuff ended up looking like piss. I threw it in a water bottle, grabbed the bloody mary mix and headed over to birthday party for our friends’ one year old son. It wasn’t bad and had a little hint of bacon- more smokey than anything. The jalapeno wasn’t very apparent but the drink mixer was quite bold. Since I don’t drink vodka straight, I’m going to try a different mixer. This time I’ll probably choose something more tame to see if we can better experience the characteristics of the infused vodka.
Bacon/jalapeno martini with a pearl onion perhaps?

As a veteran of bacon-vodka infusion, a few tips: Use more bacon – 1/2 pound of maple smoked-black pepper works great. Cook crispy, then crumble it into bits before adding to vodka. The additional surface area helps speed flavor infusion. After a couple of weeks, strain the vodka through cheesecloth, and put it in the freezer overnight in wide-mouthed jars. In the morning, use a spoon to remove the fat that will have congealed on the surface. Pour the liquid bacony booze back into a vodka bottle and store in the freezer until ready to use. Your inclination to try a martini is right on – a toothpick with two pearl onions sandwiching a twirled wedge of freshly cooked bacon, and a glass rimmed with hickory salt will send you straight to bacon heaven. Cheers!

I’m going to try this for sure. I have some jalapeños I smoked over hickory. I’ll add those and some bacon and do the Bloody Mary.
If you make some bacon vodka with no jalapeño try this recipe. It is really great.
Grandi-Oso Royale
3/4 ounce Crème de Cacao
3/4 ounce Bacon infused Vodka
1 part sense of adventure
Garnish with a small piece of drunken bacon

heres a tip, put the bacon/vodka in a different bottle or container to infuse, then freeze the vodka after the 2/3 weeks and pour through the coffee filters, the freezing will solidify the fats and help with the straining process. now you can pour back into your original vodka bottle without it being covered in bacon grease.
